The Tea of Today

China White is a small tea business situated in Christchurch, New Zealand. I came across this company when I was researching white tea and reached out to the founder and owner Jasmine Pat. We discussed her business, teas and the most exciting thing on the horizon at that time was her new packaging.

Sadly Jasmine passed away suddenly a few months ago, and after seeking permission from her family I decided I wanted to honour her by finishing this post which I started to draft about 6 months ago. Jasmine was a dedicated, passionate and savvy businesswoman who was so thrilled when she knew her tea had touched different people across the country. She made me wait a few weeks before sending some of her teas to me so I could experience the new packaging. I sent her a message the moment they arrived and told her how stunning I thought they were. She was so grateful and said my message had made her day ♥ Knowing that makes me take a little comfort in that we had bonded over something so simple, yet wonderful as tea.

Facts about China White Tea

  • 5x higher in antioxidants than any other tea – even green tea!
  • Buds are only picked a few times a year in the Fujian Province of China
  • Rare and highly prized from the tea plant Camellia Sinensis
  • Bai Mu Dan variety of tea also known as ‘white peony’
  • Lower in caffeine than most teas

Jasmine as a small child used to share cups of tea with her Chinese grandfather. He always used his finest china to serve the tea and firmly believed that he owed his longevity to quality teas. As a teenager, Jasmine helped package bulk teas in her family’s food importing business and this set the foundation to continue the family legacy. Jasmine’s intention was to make this delicately healthy tea accessible to those who were interested in consuming and benefiting from these exquisite organically grown white teas. And this is how China White was born.

Available in 4 varieties – Original, Lemongrass, Ginger and Jasmine White Teas. The business of China White is continuing on with family taking the helm. China White can be found on Facebook or their website. What a wonderful way to start the New Year with a new tea…or two.

Have a look at these delightful recipes using the Jasmine White Tea for something a little bit different this summer;

Jasmine White Asiatique

Ingredients:

  • 500ml (2 cups) of freshly brewed Organic Jasmine White Tea
  • Juice of 2 Lemons
  • 2T Lime Cordial (or use 1T of Fresh Lime Juice)
  • Sprig of Fresh Mint (optional)

Method: 

  1. Stir well
  2. Pour into a glass bottle or jug. Add a sprig of fresh mint.
  3. Chill (preferably overnight) and serve over ice cubes or crushed with a slice of lemon.

Option:

  • Sweeten to taste with palm sugar or raw sugar (dissolve in hot tea). 

Keep refrigerated for 2-3 days.

Jasmine China White – who knew it was so versatile!

Jasmine and Vanilla Martini (Serves 1)

Ingredients:

  • 50ml vodka
  • 30ml Organic Jasmine White Tea, unsweetened, steeped and chilled
  • 2 teaspoons caster sugar
  • ½ vanilla pod, severed and split
  • Ice

Method: 

  1. Stir well
  2. Pour into a glass bottle or jug. Add a sprig of fresh mint.
  3. Chill (preferably overnight) and serve over crushed ice with a slice of lemon.

Option:

  • Garnish with a split vanilla pod.
